Caramelized Figs with Cheese and Gingersnaps

  • 3 fresh figs
  • 1 tablespoon olive oil
  • 4 wedges The Laughing Cow® Creamy Light Swiss Cheese
  • 12 gingersnaps

  1. Cut each fig into 4 wedges. Place a skillet over medium-high heat and add the oil. Once hot, carefully place each fig in the skillet, with one cut-side down. Sear for 1-2 minutes, then toss and pour out onto a plate. Sprinkle with salt if desired.
  2. Open The Laughing Cow Cheese Wedges and spread about a third of each wedge on each gingersnap.
  3. Top each gingersnap with a caramelized fig and serve!
